Cauliflower Sheet Pan Nachos

Ingredients

  • sweet potatoes
  • cauliflower
  • acorn squash
  • chili powder
  • cumin
  • salt
  • pepper

Toppings

  • red pepper (chopped)
  • lettuce (chopped)
  • tomatoes (diced)
  • black beans (half a can)
  • avocado (half)
  • pickled red onions
  • jalapeño

Guacamole

  • avocado (half)
  • lime juice (from half a lime)
  • onion powder
  • garlic powder
  • salt
  • jalapeño (diced)
  • white onions (diced)

Preparation

  1. Spray and coat sweet potatoes and cauliflower with chili powder, cumin, and salt.

  2. Spray and coat acorn squash with salt and pepper.

  3. Bake all at 400°F for 25 to 30 minutes.

  4. Top the baked vegetables with chopped red pepper, chopped lettuce, diced tomatoes, half a can of black beans, half an avocado, pickled red onions, and jalapeño.

  5. Mash half an avocado with lime juice from half a lime, onion powder, garlic powder, salt, diced jalapeño, and diced white onions to make guacamole.

Notes

  1. This dish is easy, gluten-free, vegan, and healthy. Experiment with different ingredient combinations for variety.
