Vegan Pan Sheet Fajitas
Ingredients
- 4 red bell peppers
- 1 red onion
- 4 portobello mushroom caps
- olive oil (a little)
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- salt (to taste)
- 1 cup cashews
- 1/2 cup water
- 1 (4-ounce) can diced green chiles
- 1 chipotle pepper
- 1/2 teaspoon kosher salt
- tortillas
- avocado (for mashing)
Preparation
Slice up four red bell peppers, a red onion, and four portobello mushroom caps.
Toss them with a little bit of olive oil and spices: 2 tsp chili powder, 2 tsp cumin, 1 tsp garlic powder, 1 tsp onion powder, and a sprinkle of salt.
Arrange on a baking sheet and roast for 20 minutes at 450F.
Meanwhile, blend up the cashew queso using: 1 cup cashews, 1/2 cup water, 1 (4-ounce) can diced green chiles, 1 chipotle pepper, and 1/2 teaspoon kosher salt.
Assemble the fajitas with tortillas, mashed avocado, roasted peppers and mushrooms, and cashew queso.
