Vegan Pan Sheet Fajitas

Ingredients

  • 4 red bell peppers
  • 1 red onion
  • 4 portobello mushroom caps
  • olive oil (a little)
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt (to taste)
  • 1 cup cashews
  • 1/2 cup water
  • 1 (4-ounce) can diced green chiles
  • 1 chipotle pepper
  • 1/2 teaspoon kosher salt
  • tortillas
  • avocado (for mashing)

Preparation

  1. Slice up four red bell peppers, a red onion, and four portobello mushroom caps.

  2. Toss them with a little bit of olive oil and spices: 2 tsp chili powder, 2 tsp cumin, 1 tsp garlic powder, 1 tsp onion powder, and a sprinkle of salt.

  3. Arrange on a baking sheet and roast for 20 minutes at 450F.

  4. Meanwhile, blend up the cashew queso using: 1 cup cashews, 1/2 cup water, 1 (4-ounce) can diced green chiles, 1 chipotle pepper, and 1/2 teaspoon kosher salt.

  5. Assemble the fajitas with tortillas, mashed avocado, roasted peppers and mushrooms, and cashew queso.
