Pasta with Avocado Lime Dressing and Charred Chipotle Corn
Ingredients
- 1/2 lb. pasta
- 1/4 cup sliced scallions for garnish
Dressing
- 1.5 avocado
- Juice of 1 lime
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp pepper
- 1/4 cup (packed) cilantro
Corn mix
- 1.5 cups corn
- 1/3 cup diced bell pepper
- 1 tsp oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp chili powder
- 1/4 tsp onion powder
- 1/2 tsp cumin
- 1 chipotle chili in adobo
Preparation
Cook pasta until al dente, drain, and add to a large bowl.
In a large pan over medium heat, add the corn mixture ingredients and cook until corn starts to brown, stirring often, about 8 to 10 minutes if using frozen corn.
Meanwhile, blend the dressing in a food processor.
Add the dressing and cooked corn to the pasta, stir to combine, and top with sliced scallions.
Note: You can substitute fresh parsley for cilantro if desired.
