Pasta with Avocado Lime Dressing and Charred Chipotle Corn

Ingredients

  • 1/2 lb. pasta
  • 1/4 cup sliced scallions for garnish

Dressing

  • 1.5 avocado
  • Juice of 1 lime
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • 1/4 cup (packed) cilantro

Corn mix

  • 1.5 cups corn
  • 1/3 cup diced bell pepper
  • 1 tsp oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp chili powder
  • 1/4 tsp onion powder
  • 1/2 tsp cumin
  • 1 chipotle chili in adobo

Preparation

  1. Cook pasta until al dente, drain, and add to a large bowl.

  2. In a large pan over medium heat, add the corn mixture ingredients and cook until corn starts to brown, stirring often, about 8 to 10 minutes if using frozen corn.

  3. Meanwhile, blend the dressing in a food processor.

  4. Add the dressing and cooked corn to the pasta, stir to combine, and top with sliced scallions.

  5. Note: You can substitute fresh parsley for cilantro if desired.
