Easy Vegan Black Bean Tacos with Sour Cream

Ingredients

Sour cream

  • 1 cup cashews
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 1 tsp nutritional yeast
  • 1 tsp salt

Black bean filling

  • 1 can of rinsed organic black beans
  • chili powder
  • salt / pepper
  • cumin

Taco components

  • mixed tortillas (half corn, half whole wheat)
  • lettuce
  • salsa of choice
  • hot sauce
  • fresh lime

Preparation

  1. Blend all sour cream ingredients in a blender until smooth consistency is achieved. Add small amounts of water at a time as needed. If not using a high-speed blender, soak cashews beforehand.

  2. For black beans, put beans in a pan with 1/4 cup water and spices, set to high heat until it reaches a boil, then cover and simmer until water is absorbed. Optionally mash the beans for texture.

  3. Assemble tacos using mixed tortillas, place black beans first, then add lettuce, salsa of choice, hot sauce, homemade sour cream, and squeeze fresh lime on top. Note that it may be messy but is worth it for the taste.
