Spicy Chickpea Fajitas with Bell Peppers and Onion

Ingredients

  • 2 large bell peppers, sliced
  • 1 large red onion, sliced
  • 1 15 oz can chickpeas, drained and rinsed
  • 2 tablespoons olive oil

Fajita spices

  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Vegeta seasoning

Preparation

  1. Preheat your oven to 350°F.

  2. Combine the spices for the fajita mix in a small bowl and set aside.

  3. In a large pan, combine the peppers, red onion, and chickpeas.

  4. Toss with two tablespoons of olive oil, then add the fajita seasoning mix.

  5. Stir well to distribute the seasoning evenly.

  6. Roast in the oven for 25 minutes, stirring halfway through.

  7. Serve over rice or in a tortilla with your favorite toppings.
