Easy Lentil Tacos with Fresh Veggies
Ingredients
- 1 cup lentils
- 3-4 cups water
- 1/2 diced onion
- olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp chipotle powder
- 1 tsp chili powder
- 1/2 tsp sea salt
- 1/2 cup water
- 1/2 cup salsa
Roasted vegetables
- 2 bell peppers
- 1/2 zucchini
- 1/2 cup mushrooms
- 1 tbsp olive oil
- 1 tbsp Mexican fiesta seasoning
Preparation
Cook 1 cup of lentils in 3-4 cups of water according to package instructions for 20-25 minutes.
When lentils are almost done, sauté 1/2 diced onion in olive oil for 5 minutes.
Add 1 cup cooked lentils, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp chipotle powder, 1 tsp chili powder, 1/2 tsp sea salt, 1/2 cup water, and 1/2 cup salsa to the onion mixture.
Mash about half of the lentils.
Simmer the mixture until all water is absorbed.
Vegetable baking
Cut up 2 bell peppers, 1/2 zucchini, and 1/2 cup mushrooms.
Toss the vegetables with 1 tbsp olive oil and 1 tbsp Mexican fiesta seasoning.
Bake at 425°F for 20 minutes, starting when you begin cooking the lentils.
Serve the lentil mixture and roasted vegetables paired with salsa and guacamole, assembled into tacos.
