Easy Lentil Stuffed Peppers Meal Prep

Ingredients

  • 1 cup lentils
  • 3-4 cups water
  • 1/2 onion, diced
  • olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp chipotle powder
  • 1 tsp chili powder
  • 1/2 tsp sea salt
  • 1/2 cup water
  • 1/2 cup salsa
  • bell peppers
  • cheese

Preparation

  1. Cook 1 cup of lentils in 3-4 cups of water according to package instructions for about 20-25 minutes.

  2. When lentils are almost done, sauté 1/2 diced onion in olive oil for 5 minutes.

  3. Add 1 cup cooked lentils to the onion mixture.

  4. Add 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp chipotle powder, 1 tsp chili powder, and 1/2 tsp sea salt.

  5. Add 1/2 cup water and 1/2 cup salsa to the mixture.

  6. Mash about half of the lentils.

  7. Let the mixture simmer until all the water is absorbed.

  8. Cut the bell peppers in half and remove the seeds.

  9. Bake the pepper halves at 400°F for 15 minutes.

  10. Add the lentil taco meat and some cheese to the pepper halves.

  11. Bake for another 5 minutes.

  12. Enjoy the dish.

  13. This meal is easy to double for meal prep and you can substitute regular taco meat for the lentil version if desired.
