Easy Vegan Tofu Bolognese with Marinade

Ingredients

  • 1-14oz pack extra firm tofu
  • 1.5 tablespoons gluten-free tamari or soy sauce
  • 3 tablespoons nutritional yeast
  • 1.5 teaspoons chili powder
  • 1.5 teaspoons smoked paprika
  • 1.5 teaspoons chipotle powder
  • 0.75 teaspoons garlic powder
  • 1.5 tablespoons olive oil (optional)
  • Tomato sauce (about 4 cups)

Preparation

  1. Pat dry the tofu and crumble it into small pieces resembling ground meat. Set aside.

  2. Mix together the marinade using the ingredients: 1.5 tbsp gluten-free tamari or soy sauce, 3 tbsp nutritional yeast, 1.5 tsp chili powder, 1.5 tsp smoked paprika, 1.5 tsp chipotle powder, 0.75 tsp garlic powder, and 1.5 tbsp olive oil (optional).

  3. Rub the marinade evenly over the tofu crumbles.

  4. Bake on a parchment-lined baking sheet at 375°F. Toss after 15 minutes and continue cooking until browned but not burnt.

  5. Mix the baked tofu with tomato sauce (use about 4 cups) and simmer for 15 minutes until slightly thickened.

  6. For serving, cook pasta separately or in the same pot: add pasta after the sauce has simmered for a few minutes, cover, and simmer until pasta is cooked.
