Vegan Tofu Bolognese with Marinade

Ingredients

  • 1-14oz pack extra firm tofu
  • 1.5 tbsp gluten-free tamari or soy sauce
  • 3 tbsp nutritional yeast
  • 1.5 tsp chili powder
  • 1.5 tsp smoked paprika
  • 1.5 tsp chipotle powder
  • 0.75 tsp garlic powder
  • 1.5 tbsp olive oil (optional)
  • Tomato sauce (equivalent to 2-15oz cans or about 4 cups)
  • Pasta (amount not specified)

Preparation

  1. Pat dry the tofu and crumble it into ground meat-sized pieces. Set aside.

  2. Mix together the marinade ingredients.

  3. Rub the marinade evenly over the tofu crumbles.

  4. Bake on a parchment-lined baking sheet at 375F. Toss after about 15 minutes and continue cooking until browned but not burnt.

  5. Mix with homemade or store-bought tomato sauce and simmer for about 15 minutes until slightly thickened. Use the desired amount of tomato sauce depending on how saucy you want your bolognese.

  6. Cook pasta in the same pot by adding it after the sauce has simmered a few minutes, cover and simmer for the time it takes for the pasta to cook, or cook the pasta separately and add when serving.
