Tofu Bolognese with Spicy Marinade
Ingredients
- 1-14 oz pack extra firm tofu
- 1.5 tbsp gluten-free tamari or soy sauce
- 3 tbsp nutritional yeast
- 1.5 tsp chili powder
- 1.5 tsp smoked paprika
- 1.5 tsp chipotle powder
- 0.75 tsp garlic powder
- 1.5 tbsp olive oil (optional)
- about 4 cups tomato sauce (homemade or store-bought)
Preparation
Pat dry the tofu and crumble it with hands into pieces similar in size to ground meat. Set aside.
Mix together the marinade ingredients and rub them evenly over the tofu crumbles.
Bake the marinated tofu on a parchment-lined baking sheet at 375°F. Toss after about 15 minutes and continue cooking until browned but not burnt.
Mix the baked tofu with the desired amount of tomato sauce and simmer for about 15 minutes until slightly thickened.
Optionally, cook pasta in the same pot by adding it after the sauce has simmered for a few minutes, then cover and simmer until pasta is done, or cook pasta separately and add when serving.
