Super Easy Tofu Bolognese

Ingredients

  • 1-14oz pack extra firm tofu
  • 1.5 tablespoons gluten-free tamari or soy sauce
  • 3 tablespoons nutritional yeast
  • 1.5 teaspoons chili powder
  • 1.5 teaspoons smoked paprika
  • 1.5 teaspoons chipotle powder
  • 0.75 teaspoon garlic powder
  • 1.5 tablespoons olive oil (optional)
  • Tomato sauce (approximately 4 cups, adjustable)
  • Pasta (amount not specified)

Preparation

  1. Pat dry 1-14oz pack of extra firm tofu and crumble with hands, then set aside.

  2. Mix together marinade using 1.5 tablespoons gluten-free tamari or soy sauce, 3 tablespoons nutritional yeast, 1.5 teaspoons chili powder, 1.5 teaspoons smoked paprika, 1.5 teaspoons chipotle powder, 0.75 teaspoon garlic powder, and 1.5 tablespoons olive oil (optional).

  3. Rub the marinade evenly over the tofu crumbles.

  4. Bake on a parchment-lined baking sheet at 375F, tossing after about 15 minutes and continuing to cook until browned but not burnt.

  5. Mix the baked tofu with homemade or store-bought tomato sauce and simmer for about 15 minutes until slightly thickened, using desired amount of sauce (e.g., equivalent of 2-15oz cans or approximately 4 cups).

  6. Cook pasta in the same pot by adding it after the sauce has simmered a few minutes, then cover and simmer for the time it takes for the pasta to cook, or cook pasta separately and add when serving.
