Super Easy Tofu Bolognese

Ingredients

  • 1-14oz pack extra firm tofu
  • 1.5 tbsp gluten-free tamari or soy sauce
  • 3 tbsp nutritional yeast
  • 1.5 tsp chili powder
  • 1.5 tsp smoked paprika
  • 1.5 tsp chipotle powder
  • 0.75 tsp garlic powder
  • 1.5 tbsp olive oil (optional)
  • Tomato sauce (e.g., 4 cups or equivalent of 2-15oz cans)
  • Pasta (as needed)

Marinade components

  • 1.5 tbsp gluten-free tamari or soy sauce
  • 3 tbsp nutritional yeast
  • 1.5 tsp chili powder
  • 1.5 tsp smoked paprika
  • 1.5 tsp chipotle powder
  • 0.75 tsp garlic powder
  • 1.5 tbsp olive oil (optional)

Preparation

  1. Pat dry the tofu and crumble it with hands, then set aside.

  2. Mix together the marinade using the marinade components.

  3. Rub the marinade evenly over the tofu crumbles.

  4. Bake on a parchment-lined baking sheet at 375°F, tossing after about 15 minutes and continuing to cook until browned but not burnt.

  5. Mix with the desired amount of homemade or store-bought tomato sauce and simmer for about 15 minutes until slightly thickened.

  6. For pasta, add it to the same pot after the sauce has simmered a few minutes, cover, and simmer until cooked, or cook pasta separately and add when serving.

  7. Use the equivalent of about 4 cups of tomato sauce for desired consistency, as preferred.
