Vegan Gluten-Free Tempeh Burgers

Ingredients

  • 1 8oz block of tempeh
  • 1 small onion
  • olive oil or veggie broth
  • 2 slices of gluten-free bread
  • 3/4 tsp smoked paprika
  • 3/4 tsp chili powder
  • 3/4 tsp chipotle powder
  • 3/4 tsp garlic powder
  • 1.5 tbsp nutritional yeast
  • 1 tbsp gluten-free tamari or soy sauce
  • 2 tsp olive oil
  • 2 tbsp flour
  • salt to taste

Preparation

  1. Gently boil 1 8oz block of tempeh for 5 minutes to reduce bitterness.

  2. Rinse under cold water.

  3. Use your hands to crumble it into mince-like pieces.

  4. Sauté 1 small onion in a little olive oil or veggie broth.

  5. Add the sautéed onion to the tempeh crumbles.

  6. Crumble 2 slices of gluten-free bread into small chunks and add to the tempeh crumbles. (Whole grain bread can be used, but most types will work.)

  7. Add 3/4 tsp smoked paprika, 3/4 tsp chili powder, 3/4 tsp chipotle powder, 3/4 tsp garlic powder, 1.5 tbsp nutritional yeast, 1 tbsp gluten-free tamari or soy sauce, and 2 tsp olive oil.

  8. Use hands to incorporate the spices into the tempeh crumbles.

  9. Add 2 tbsp flour.

  10. Add salt to taste.

  11. Form into about 5-6 burgers, about 1/2-3/4 inch thick.

  12. Bake on a lined sheet at 375F until golden brown, flipping halfway (about 20 minutes), or cook in a little oil in a non-stick fry pan.

  13. Serve with veggies of your choice!
