Super Easy Tofu Bolognese

Ingredients

  • 1-14 oz package extra firm tofu
  • Desired amount of tomato sauce (e.g., 4 cups)

Marinade

  • 1.5 tablespoons gluten-free tamari or soy sauce
  • 3 tablespoons nutritional yeast
  • 1.5 teaspoons chili powder
  • 1.5 teaspoons smoked paprika
  • 1.5 teaspoons chipotle powder
  • 0.75 teaspoons garlic powder
  • 1.5 tablespoons olive oil (optional)

Preparation

  1. Preheat oven to 375°F

  2. Pat dry the tofu and crumble it with hands, then set aside

  3. Mix together the marinade ingredients

  4. Rub the marinade evenly over the tofu crumbles

  5. Bake on a parchment-lined baking sheet, tossing after 15 minutes and continuing until browned but not burnt

  6. Mix with tomato sauce and simmer for about 15 minutes until slightly thickened

  7. Optionally, cook pasta in the same pot or separately and serve with the bolognese
