Vegan Tofu Bolognese Sauce
Ingredients
- 1-14 oz package extra firm tofu
- approximately 4 cups tomato sauce (adjust to taste)
Marinade
- 1-1/2 tablespoons gluten-free tamari or soy sauce
- 3 tablespoons nutritional yeast
- 1-1/2 teaspoons chili powder
- 1-1/2 teaspoons smoked paprika
- 1-1/2 teaspoons chipotle powder
- 3/4 teaspoon garlic powder
- 1-1/2 tablespoons olive oil
Preparation
Pat dry the tofu and crumble it with hands to resemble ground meat, then set aside.
Mix together the marinade ingredients.
Rub the marinade evenly over the tofu crumbles.
Bake on a parchment-lined baking sheet at 375°F, tossing after about 15 minutes and continuing until browned but not burnt.
Mix with tomato sauce and simmer for about 15 minutes until slightly thickened.
Serve with pasta.
Notes
Adjust the amount of tomato sauce to achieve desired sauciness; approximately 4 cups is equivalent to two 15-ounce cans.
