Super Easy Tofu Bolognese

Ingredients

  • 1-14oz pack extra firm tofu
  • tomato sauce (about 4 cups)

Marinade

  • 1.5 tbsp gluten-free tamari or soy sauce
  • 3 tbsp nutritional yeast
  • 1.5 tsp chili powder
  • 1.5 tsp smoked paprika
  • 1.5 tsp chipotle powder
  • 0.75 tsp garlic powder
  • 1.5 tbsp olive oil (optional)

Preparation

  1. Pat dry and crumble the 1-14oz pack of extra firm tofu with hands. Set aside.

  2. Mix together the marinade ingredients.

  3. Rub the marinade evenly over the tofu crumbles.

  4. Bake on a parchment-lined baking sheet at 375°F. Toss after about 15 minutes and continue cooking until browned but not burnt.

  5. Mix with homemade or store-bought tomato sauce and simmer for about 15 minutes until slightly thickened. Use desired amount of tomato sauce; approximately 4 cups is suggested.

  6. Optionally, cook pasta in the same pot after sauce has simmered a few minutes, cover and simmer until pasta is done, or cook pasta separately and serve with the bolognese.
