Vegan Tofu Bolognese Sauce
Ingredients
- 1 (14-ounce) package extra-firm tofu
- Tomato sauce (to taste, approximately 4 cups)
Marinade
- 1.5 tablespoons gluten-free tamari or soy sauce
- 3 tablespoons nutritional yeast
- 1.5 teaspoons chili powder
- 1.5 teaspoons smoked paprika
- 1.5 teaspoons chipotle powder
- 0.75 teaspoons garlic powder
- 1.5 tablespoons olive oil (optional)
Preparation
Pat dry the tofu and crumble it into pieces resembling ground meat; set aside.
Mix together the marinade ingredients.
Rub the marinade evenly over the tofu crumbles.
Bake on a parchment-lined baking sheet at 375°F, tossing after 15 minutes, until browned but not burnt.
Mix the baked tofu with tomato sauce and simmer for about 15 minutes until slightly thickened.
Tips
For pasta, add it to the same pot after the sauce has simmered for a few minutes, cover, and simmer until cooked.
Alternatively, cook pasta separately and combine it when serving.
