Vegan Stuffed Potato Skins

Ingredients

  • 3 medium-sized potatoes
  • 1/2 tablespoon oil
  • 1 small/medium onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups corn
  • 1 1/2 cups black beans or kidney beans
  • 1/3 cup vegan sour cream
  • 2 tablespoons nutritional yeast flakes (optional)
  • 6-8 tablespoons vegan cheese
  • 4 scallions, chopped

Spice mixture

  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • sea salt to taste
  • black pepper to taste
  • hot sauce to taste

Preparation

  1. Preheat oven to 400°F and bake potatoes until tender, about 45-60 minutes.

  2. Cut potatoes in half lengthwise and scoop out the flesh, leaving a thin layer inside the skins.

  3. In a skillet, heat oil over medium heat and sauté chopped onion and minced garlic until softened.

  4. Add corn and beans to the skillet and cook for a few minutes until heated through.

  5. Mix the scooped potato flesh with the sautéed vegetables, vegan sour cream, spice mixture, and nutritional yeast if using.

  6. Stuff the potato skins with the filling mixture and top with vegan cheese.

  7. Bake stuffed skins until the cheese melts and the tops are golden, about 10-15 minutes.

  8. Remove from oven and garnish with chopped scallions before serving.
