Vegan Thai-Style Potato Cakes

Ingredients

  • 4 boiled potatoes
  • 1/2 cup semolina
  • 2 tablespoons nutritional yeast
  • 1 tablespoon soya sauce
  • 2 teaspoons salt
  • Oil for frying

Thai paste

  • 6 soaked red chillies
  • 2 bird eye chillies
  • 3 garlic
  • 1 inch ginger
  • 2 lime leaves
  • 1 tablespoon lemongrass
  • 1 tablespoon coriander stems
  • 2 spring onions
  • 2 shallots
  • 1 tablespoon nori (optional)
  • 1 tablespoon coriander powder
  • 1/2 tablespoon cumin powder
  • 1/2 tablespoon pepper powder

Preparation

  1. Make a paste by grinding the listed ingredients together

  2. Mix 2 tablespoons of paste with the other listed ingredients

  3. Shape into cakes and fry in sesame or vegetable oil until crispy
