Vegan Tofu Scramble with Veggies and Rice

Ingredients

  • 1/2 block drained and pressed tofu
  • 1/4 large red onion
  • 1/2 container of sliced mushrooms
  • 1 handful spinach
  • 1/3 cup frozen peas
  • 2 tsp soy sauce
  • 1/4 cup veggie broth
  • 1 tsp minced garlic
  • 1/4 tsp turmeric
  • 1 tsp oregano
  • 1/2 tsp adobo seasoning
  • Salt and pepper to taste

Preparation

  1. In a sauté pan, add onion and mushroom. Allow to cook down until onion has softened and mushrooms caramelize.

  2. Crumble up tofu into the pan and add in seasonings and soy sauce. Stir and combine.

  3. Add in peas, spinach and veggie broth. Allow spinach to wilt and veggie broth to cook off before turning off the heat.

  4. Adjust seasonings as desired then serve. Enjoy with mashed avocado and Jasmine rice.
