Black Beans with Maple and Cayenne

Ingredients

  • 1 tbsp olive oil
  • 2-3 dry chilies
  • 1/4 medium red onion, diced
  • 1 small green bell pepper, diced
  • 4 cloves garlic, minced
  • 2 tsp smoked paprika
  • 1 tsp sazón
  • 1/8 to 1/4 tsp cayenne pepper (adjust based on spice preference)
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1 tbsp tomato paste
  • 2 tbsp soy sauce
  • 2 tbsp apple cider vinegar
  • 3 tbsp maple syrup
  • 1 can black beans (whole can with liquid or if rinsing beans add about 1/2 cup veggie broth and mash some to thicken sauce)

Preparation

  1. In a pan add oil and red chilies and sauté for about 1-2 minutes on medium heat.

  2. Add in onions and green peppers until onions are softened.

  3. Stir in garlic and sauté until fragrant, about 1 minute.

  4. To the pan add all of your seasonings, mixing and sautéing for an additional minute.

  5. Add in tomato paste, stir well with other veggies for 1-2 minutes.

  6. Add in all remaining ingredients and bring to a low simmer.

  7. Cover with lid and simmer on low for about 10-15 minutes.

  8. Stir well and remove chilies.

  9. Adjust salt and pepper to your liking.

Serving suggestions

  1. Serve with brown rice, broccoli, and avocado.
