Jerk Seasoned Lentil Stew
Ingredients
- 1 cup dry lentils (black lentils used)
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1 inch ginger, minced
- 5 cloves garlic, minced
- 1 15oz can of diced tomatoes
- 1 1/2 tbsp jerk seasoning
- 2 tsp brown mustard
- 2 tsp maple syrup
- 3 cups mushroom or vegetable broth
- Juice of 1/2 lime
- Zest of one lime
Jerk seasoning
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp smoked paprika
- 1/4 tsp cayenne pepper
- 2 tsp dry thyme
- 2 tsp dry parsley
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp red pepper flakes
- 1/4 tsp salt
- 1/4 tsp pepper
Preparation
Combine the spices in a jar and mix well before using.
In a medium pot, add onion and sauté until softened.
Add ginger, garlic and bell pepper and sauté until fragrant.
Add lentils, tomatoes, jerk seasoning, mustard and maple syrup; stir to combine.
Add broth, bring to a boil and reduce to a simmer.
Cover and allow to cook for 25 minutes or until most of liquid is absorbed.
Add lime zest and lime juice, stir and remove from heat to serve.
