Jerk Seasoned Lentil Stew

Ingredients

  • 1 cup dry lentils (black lentils used)
  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 1 inch ginger, minced
  • 5 cloves garlic, minced
  • 1 15oz can of diced tomatoes
  • 1 1/2 tbsp jerk seasoning
  • 2 tsp brown mustard
  • 2 tsp maple syrup
  • 3 cups mushroom or vegetable broth
  • Juice of 1/2 lime
  • Zest of one lime

Jerk seasoning

  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 2 tsp dry thyme
  • 2 tsp dry parsley
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp allspice
  • 1/2 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp pepper

Preparation

  1. Combine the spices in a jar and mix well before using.

  2. In a medium pot, add onion and sauté until softened.

  3. Add ginger, garlic and bell pepper and sauté until fragrant.

  4. Add lentils, tomatoes, jerk seasoning, mustard and maple syrup; stir to combine.

  5. Add broth, bring to a boil and reduce to a simmer.

  6. Cover and allow to cook for 25 minutes or until most of liquid is absorbed.

  7. Add lime zest and lime juice, stir and remove from heat to serve.
