Jerk Spiced Lentil Stew

Ingredients

Jerk spice blend

  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 2 tsp dry thyme
  • 2 tsp dry parsley
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp allspice
  • 1/2 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp pepper

Lentils

  • 1 cup black lentils
  • 1/2 red onion
  • 1 red bell pepper
  • 1 inch ginger
  • 5 cloves garlic
  • 1 15oz can diced tomatoes
  • 1 1/2 tbsp jerk seasoning
  • 2 tsp brown mustard
  • 2 tsp maple syrup
  • 3 cups mushroom or vegetable broth
  • Juice of 1/2 lime
  • Zest of 1 lime

Preparation

Spice blend

  1. Combine spices in a jar and mix well before using.

Cooking

  1. In a medium pot, sauté onion until softened.

  2. Add ginger, garlic, and bell pepper; sauté until fragrant.

  3. Add lentils, tomatoes, jerk seasoning, mustard, and maple syrup; stir to combine.

  4. Add broth, bring mixture to a boil, and reduce to a simmer.

  5. Cover and cook for 25 minutes or until most of liquid is absorbed.

  6. Add lime zest and lime juice, stir, and remove from heat to serve.
