Jerk Spiced Lentil Stew
Ingredients
Jerk spice blend
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp smoked paprika
- 1/4 tsp cayenne pepper
- 2 tsp dry thyme
- 2 tsp dry parsley
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp red pepper flakes
- 1/4 tsp salt
- 1/4 tsp pepper
Lentils
- 1 cup black lentils
- 1/2 red onion
- 1 red bell pepper
- 1 inch ginger
- 5 cloves garlic
- 1 15oz can diced tomatoes
- 1 1/2 tbsp jerk seasoning
- 2 tsp brown mustard
- 2 tsp maple syrup
- 3 cups mushroom or vegetable broth
- Juice of 1/2 lime
- Zest of 1 lime
Preparation
Spice blend
Combine spices in a jar and mix well before using.
Cooking
In a medium pot, sauté onion until softened.
Add ginger, garlic, and bell pepper; sauté until fragrant.
Add lentils, tomatoes, jerk seasoning, mustard, and maple syrup; stir to combine.
Add broth, bring mixture to a boil, and reduce to a simmer.
Cover and cook for 25 minutes or until most of liquid is absorbed.
Add lime zest and lime juice, stir, and remove from heat to serve.
