Colorful Vegan Grain Bowl with Tofu and Beans

Ingredients

  • sorghum
  • herbed tofu
  • harissa
  • brussel sprouts
  • red kidney beans
  • spinach and arugula mix
  • kalamata olives

Preparation

  1. Cook sorghum according to package directions until tender.

  2. Air-fry herbed tofu until crispy and golden.

  3. Roast brussel sprouts in the oven until browned and tender.

  4. Rinse and drain red kidney beans if using canned; cook if using dried.

  5. Wash spinach and arugula mix and pat dry.

  6. Prepare homemade harissa by blending chili peppers, garlic, and spices as desired.
