Healthy Cauliflower Fried Rice with Asian Flavors
Ingredients
- 2 tablespoons coconut oil
- 1 cauliflower
- 1 leek
- 2 teaspoons to 1 tablespoon curry powder
- chili flakes to taste
- ginger to taste
- 1 zucchini
- 2 spring onions
- 2 zucchini or 3 kale leaves (optional)
- 2 garlic cloves
- 2 organic eggs (optional)
- 1 tablespoon soy or tamari
- salt and pepper to taste
- cashews
Preparation
Heat oil and fry leek and garlic.
Blend the cauliflower florets until rice-like.
Add cauliflower, curry powder, chili, ginger, zucchini, spring onion to the mix and lightly heat.
Crack 2 eggs into mix and stir through, continue to cook until egg is cooked and rice is warm. Stir through soy or tamari and season with salt and pepper.
Serve warm and coat with toasted cashews.
Serving suggestions
This dish is super filling on its own. Optionally, serve with slow cooked chicken and baked Brussels for extra protein and greens.
