Quick and Easy Vegan Chili

Ingredients

  • 1 onion, chopped (150g)
  • 1 large red bell pepper, chopped (250g)
  • 2 garlic cloves, minced
  • 2 cans of chili beans (900 ml)
  • 1 can spicy diced tomatoes (540 ml)

Optional seasonings

  • 1 tsp smoked paprika
  • 1 tsp pepper
  • 1 tsp cumin

Preparation

  1. Set instant pot to sauté and fry onions and garlic for 2-3 minutes.

  2. Add in the bell pepper and stir.

  3. If using seasonings, add them with the bell pepper and corn and stir.

  4. Add in the 2 cans of chili beans and stir to combine.

  5. Add in the tomatoes but do not mix.

  6. Cover and seal instant pot with the lid.

  7. Set to the manual setting and cook on high for 15 minutes.

  8. Release heat and then serve with cilantro, green onions, tortilla chips and avocado.
