Tabbouleh Buddha Bowl

Ingredients

  • 1 cup of fine Bulgur Wheat
  • 1 1/2 cups of boiling Water
  • 2 plus Tbsp of Oil
  • Juice of one large Lemon
  • 1/2 cup chopped Parsley
  • 1/3 cup chopped Mint
  • 1/2 cup chopped Tomatoes
  • 1/2 cup chopped Cucumber
  • 1 Green Onion finely sliced
  • Salt & Pepper to taste

Preparation

  1. In a pan, toast the Bulgur Wheat in a bit of Oil until it’s lightly browned and becomes aromatic

  2. Add the boiling water, mix well and cover. Adjust the heat to low and let sit for at least 20 minutes

  3. Deseed the Tomatoes and finely chop them along with the Herbs, and Cucumber

  4. Fluff the Bulgur Wheat and either drain any excess liquid or continue to cook until dry (be careful not to burn)

  5. Combine the chopped Veggies, fresh Herbs, Oil, Lemon Juice and cooked Bulgur Wheat together. Add Salt & Pepper to taste and serve immediately
