Vegan Warm Orzo Salad
Ingredients
- 3 cups cooked orzo
- 1 diced red pepper
- 3 diced large carrots
- 1/2 head of chopped cauliflower
- 1 cubed zucchini
- 1 diced red onion
- 1 15 oz can chickpeas rinsed and drained
- 1/2 cup vegan feta
- parsley for garnish
Dressing
- 1/2 cup hummus
- 2 tbsp lemon juice
- 2 tbsp water
- 1 tbsp olive oil
- garlic
- salt
- pepper
Preparation
Roast all the veggies with olive oil, salt, and pepper on a baking sheet for 30 minutes at 425°F.
Cook the orzo. Warm the chickpeas in the microwave for a minute with extra virgin olive oil, salt, and pepper.
Add all ingredients into a large serving bowl.
Mix the dressing together and pour it on top. Garnish with parsley.
Notes
The vegetable measurements are for after they have been roasted and shrunk down.
For a gluten-free option, substitute with rice, quinoa, or gluten-free orzo.
