Fluffy Pancakes with Oat and Self-Raising Flour

Ingredients

  • 1 cup self raising flour
  • 1 cup oat flour (blended oats) or sub for plain flour
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1 and 1/2 cup milk

Preparation

  1. Heat a frying pan on medium to high heat.

  2. Add a knob of margarine to the pan and once melted, tilt the pan so the margarine coats the base.

  3. Pour some of the batter into the frying pan. Once little bubbles appear on the surface, flip the pancake. Leave to cook for a few minutes and then repeat until all the batter has been used.

Tips

  1. Top the pancakes with dairy-free vanilla ice cream, banana, pan-fried blueberries, maple syrup, and roasted peanut butter for a delicious stack.

  2. The mixture of oat flour and self-raising flour creates a fluffy texture.
