Simple Banana Pancakes with Pantry Staples

Ingredients

  • 1 cup self-raising flour
  • 1 cup milk
  • 1 ripe banana
  • 1 egg
  • A pinch of salt
  • Vanilla extract or cinnamon or orange zest (optional)
  • Thin slices of banana (optional)

Preparation

  1. Mash the ripe banana with a fork until smooth.

  2. In a mixing bowl, combine the self-raising flour, milk, egg, a pinch of salt, and optional vanilla extract, cinnamon, or orange zest to form a batter.

  3. Heat a non-stick skillet or griddle over medium heat.

  4. Pour portions of the batter onto the skillet to make pancakes.

  5. Optionally, place thin slices of banana on top of each pancake before flipping.

  6. Cook until bubbles form on the surface and the edges set, then flip and cook until golden brown on both sides.

  7. Serve warm, optionally with additional toppings.

Notes

  1. Self-raising flour already contains leavening agents, so no additional baking soda or powder is needed.
