Vegan Crepes for Pancake Day

Ingredients

  • 2 cups plain flour
  • 2 cups milk
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Preparation

  1. Add all the ingredients to a bowl and whisk together. Cover with a plate and refrigerate for at least an hour.

  2. Heat a frying pan on medium-high heat and add a little butter or oil, waiting for it to sizzle.

  3. Add a ladle full of mixture to the pan, tilt the pan to spread the mixture, and cook until bubbles appear. Flip the crepe and cook until browned, then place on a plate. Repeat with the remaining mixture.

Tips

  1. Top with fruit, smooth peanut butter, and maple syrup. Alternatively, add chocolate spread inside the crepe.
