Walnut Squash and Chard with Golden Raisins
Ingredients
- 1.5 lb squash, peeled and diced
- 2 tbs of olive oil
- 1 cup of walnuts, roughly chopped
- 1-2 lbs of red swiss chard
- 1/2 tsp of ginger powder
- 1/2 tsp of cumin
- 1/2 tsp of turmeric
- 1 tsp of dried oregano
- 1/2 tsp of cayenne pepper
- 1/2 tbs liquid aminos
- Salt and pepper to taste
- 3/4 cup of golden raisins
Preparation
On a medium-low heat pan, add your olive oil and squash.
Cook for about 10 minutes.
Add your walnuts and cook for another 10 minutes.
Stir consistently to avoid the walnuts burning and for them to release their natural oils.
When the squash become soft, add the red swiss chard.
Add spices and liquid aminos. Stir well.
Add the golden raisins. Cook for another few minutes.
