Savory Plantain Breakfast Bowl
Ingredients
- 2 green plantains
- 1 tablespoon olive oil
- 1 15-ounce can chickpeas, rinsed and drained
- 1/2 red onion, sliced
- 2-3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon turmeric
- 1/2 teaspoon dried oregano
- 1 avocado, sliced
- Salt and pepper to taste
Preparation
Bring a pot of water to a boil and salt it.
Peel and quarter the plantains, then add them to the boiling water and boil for 10-15 minutes or until fork tender.
While the plantains are boiling, heat the olive oil in a pan, add the sliced red onion and a pinch of salt, and sauté until softened.
Add the minced garlic and red pepper flakes, and sauté until fragrant.
Add the drained chickpeas, turmeric, and oregano, and sauté occasionally to brown the chickpeas and coat them with the spices.
To assemble, place the cooked plantains in a bowl or plate.
Tips
Optionally, mash the plantains with 1-2 tablespoons of the cooking water and 1-2 teaspoons of oil to prevent dryness.
Top with the chickpea mixture, sliced avocado, and optional additions like hot sauce and cilantro.
