Simple Sweet Potato Tacos
Ingredients
- 6-8 small tortillas
- 2 large sweet potatoes
- 1/2 tsp paprika
- 1/2 tsp smoked paprika
- 1 tsp cumin
- 1 tsp chili powder
- 1 can (15 oz) refried beans
- 2 avocados
- 2 tbsp lime juice
- 1 bunch cilantro
- 1/2 medium onion
Optional additions
- salsa or pico de gallo
- vegan sour cream
Preparation
Cut the sweet potatoes into 2-inch pieces and bake at 375°F for 25 minutes until soft.
Mix the paprika, smoked paprika, cumin, and chili powder to create a spice blend
Toss the sweet potato pieces with the spice blend before baking or use it to season other components
Chop the onion
Mash the avocados with lime juice to make a simple guacamole
Heat the refried beans
Assemble the tacos by filling the tortillas with refried beans, baked sweet potatoes, guacamole, chopped onion, and cilantro
