Vegan Sushi Style Rice Burgers

Ingredients

  • 3 cups cooked sushi rice
  • 1 package FieldBurger (thawed to room temperature)
  • 2 tablespoons rice vinegar
  • 1 tablespoon mirin
  • a pinch of salt (optional)
  • Furikake seasoning or nori sheets (optional)

Fillings

  • kale
  • avocado
  • purple cabbage

Condiment

  • yellow mustard
  • maple syrup

Preparation

  1. Season cooked rice with mirin and rice vinegar, then let it cool down

  2. Place about 1/3 cup of rice into a 2-inch diameter round bowl wrapped in plastic with a flat bottom

  3. Press the rice tightly using a spoon or spatula to form a bun

  4. Alternatively, shape the rice using a glass bowl or sushi presser

  5. Heat a non-stick pan with a drizzle of oil over medium heat

  6. Sear the rice bun until golden brown on both sides

  7. Set the rice buns aside until ready to use

  8. Add a little more oil to the same pan

  9. Sear the thawed FieldBurger for about 2-3 minutes on each side until slightly crispy

  10. Place one rice bun on a plate

  11. Layer with a kale leaf, a handful of julienned purple cabbage, the FieldBurger patty, and a few avocado slices

  12. Add a tiny spoonful of maple mustard

  13. Top with another rice bun

  14. Sprinkle with Furikake seasoning

  15. Serve immediately
