Easy Vegan Mini Cakes

Ingredients

  • 2 cups wholegrain flour
  • 1/2 cup flaxseeds
  • 1 tsp baking powder
  • 1 tbsp vinegar
  • 1 cup vegan milk
  • 1 cup water
  • lemon zest
  • vanilla flavor
  • coconut sugar to taste (about 40g)
  • 2 tbsp peanut butter
  • 200g dark chocolate

Frosting

  • powdered sugar
  • lemon juice

Preparation

  1. Preheat oven to 180°C

  2. Mix dry ingredients together

  3. Mix wet ingredients together

  4. Combine wet and dry mixtures and stir in dark chocolate if needed

  5. Pour batter into mini cake molds and bake at 180°C for 15 minutes or until a skewer comes out clean.

Frosting

  1. Mix powdered sugar and lemon juice to create frosting

  2. Apply frosting to cooled mini cakes
