Easy Vegan Mini Cakes
Ingredients
- 2 cups wholegrain flour
- 1/2 cup flaxseeds
- 1 tsp baking powder
- 1 tbsp vinegar
- 1 cup vegan milk
- 1 cup water
- lemon zest
- vanilla flavor
- coconut sugar to taste (about 40g)
- 2 tbsp peanut butter
- 200g dark chocolate
Frosting
- powdered sugar
- lemon juice
Preparation
Preheat oven to 180°C
Mix dry ingredients together
Mix wet ingredients together
Combine wet and dry mixtures and stir in dark chocolate if needed
Pour batter into mini cake molds and bake at 180°C for 15 minutes or until a skewer comes out clean.
Frosting
Mix powdered sugar and lemon juice to create frosting
Apply frosting to cooled mini cakes
