Vegan Carrot Cake Blondies

Ingredients

  • 1 cup (100g) ground almonds
  • 1 cup (100g) oat flour
  • 1/4 cup (45g) coconut sugar [Kokosblütenzucker]
  • 1 pack (8g vanilla sugar) or use 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • pinch of salt
  • 1 cup (230g) apple sauce, unsweetened [Apfelmuß, ungesüßt]
  • 1.5 cups (140g) grated carrots
  • 0.5 cup (110ml) soy milk

Frosting

  • 150g vegan cream cheese plain [SimplyV Frischkäse natur]
  • 1/4 cup (30g) powdered sugar
  • marzipan carrots for decoration

Preparation

  1. Preheat oven to 180°C (350F)

  2. In a large bowl whisk together dry ingredients.

  3. Add all wet ingredients and mix in using a spatula.

  4. Layer the baking dish with parchment paper and fill in the dough.

  5. Bake for about 40 minutes.

  6. Let the cake cool down completely.

  7. For the frosting mix together the cream cheese and the sifted powdered sugar. Spread on top of the cake once it is cool. Decorate with marzipan carrots.
