High Protein Lemon Cake
Ingredients
- 100g ground almonds
- 100g soy yogurt (unsweetened)
- 60g apple sauce (Apfelmuß)
- 60ml soy milk
- 50g chickpea flour
- 50g vanilla protein powder
- 2 tbsp coconut oil
- 1 tbsp baking powder
- 1 lemon (peel and juice)
- 2-4 tbsp sugar (I used Xylitol (Xucker))
- pinch of salt
Preparation
Preheat oven to 180°C (350F)
Mix together dry ingredients
Add wet ingredients and mix together using a spatula.
Line the form with baking sheets and fill in dough.
Bake for about 22-25 minutes or until toothpick comes out clean
