High Protein Lemon Cake

Ingredients

  • 100g ground almonds
  • 100g soy yogurt (unsweetened)
  • 60g apple sauce (Apfelmuß)
  • 60ml soy milk
  • 50g chickpea flour
  • 50g vanilla protein powder
  • 2 tbsp coconut oil
  • 1 tbsp baking powder
  • 1 lemon (peel and juice)
  • 2-4 tbsp sugar (I used Xylitol (Xucker))
  • pinch of salt

Preparation

  1. Preheat oven to 180°C (350F)

  2. Mix together dry ingredients

  3. Add wet ingredients and mix together using a spatula.

  4. Line the form with baking sheets and fill in dough.

  5. Bake for about 22-25 minutes or until toothpick comes out clean
