No-Bake Chocolate Mousse Cake

Ingredients

Base

  • 80 g soft dates or dried fruits
  • 80 g oat flour
  • water

Chocolate mousse

  • 400 g silken tofu
  • 160 g dark melted chocolate (vegan)
  • a pinch of salt

Optional

  • 2 tablespoons cacao
  • approximately 25 g coconut sugar or regular sugar

Chocolate sauce

  • 1 tablespoon date syrup
  • 1 teaspoon cacao
  • approximately 2 tablespoons water

Preparation

  1. Puree or mix the dates with a splash of warm water. It can be chunky. If the dates are really soft, you can also use your hands to mix them with the oat flour to form a dough. If they are hard, soak them in hot water for a few minutes. Press the oat-date dough into a small round form with a diameter of 14 cm.

  2. Mix all the chocolate mousse ingredients in a mixer or with a whisk until smooth. Spread the mousse over the base. Place in the fridge for at least 2 hours.

  3. Mix the chocolate sauce ingredients and spread it over the cake. Serve and enjoy.
