Summer Berry Tartlets

Ingredients

  • 2 cups of almond flour, 1/2 cup of coconut flour
  • - pinch of salt
  • - 2 tbsp cold butter (can use coconut oil but has to be solid)
  • - 3 tbsp of agave (2 tbsp if using maple syrup)
  • - 1/2 tbsp of apple cider vinegar
  • - 2 tbsp aquafaba (AKA chickpea liquid)
  • fresh berries
  • cacao nibs

Preparation

  1. Use a fork to ‘cut’ the butter into the flour until a sandy texture

  2. Add in all the other ingredients and mix well

  3. Add about a tbsp of the crust mixture into a small muffin case and press

  4. Bake for 12 minutes at 180˚C

  5. Once cooled add the filling & toppings
