Super Delicious Vegan Lemon Cupcakes

Ingredients

Cupcake

  • 1 dl aquafaba
  • 1 dl sugar
  • 0.5 dl rapeseed oil
  • 2 tsp lemon zest
  • Juice from 1/2 lemon
  • 2.5 dl flour
  • 1 tsp baking powder
  • 1 tsp vanilla powder
  • A pinch of salt

Frosting

  • 50 g cream cheese
  • 25 g vegan butter
  • 1 tsp vanilla powder
  • 4 dl powdered sugar

Preparation

  1. Preheat the oven to 200 degrees Celsius.

  2. In a bowl, whisk sugar and aquafaba together.

  3. Add oil, lemon juice, and zest to the bowl and whisk for a few more minutes.

  4. In another bowl, combine the dry ingredients together before adding them to the liquid ones.

  5. Mix everything together and then divide the batter into 8 small cupcake forms.

  6. Bake in the oven for 17 minutes.

  7. Allow the cupcakes to cool completely.

Frosting

  1. Add all the ingredients to a bowl and whisk them together.

  2. Add the frosting to a piping bag and decorate the cupcakes.
