Super Delicious Vegan Lemon Cupcakes
Ingredients
Cupcake
- 1 dl aquafaba
- 1 dl sugar
- 0.5 dl rapeseed oil
- 2 tsp lemon zest
- Juice from 1/2 lemon
- 2.5 dl flour
- 1 tsp baking powder
- 1 tsp vanilla powder
- A pinch of salt
Frosting
- 50 g cream cheese
- 25 g vegan butter
- 1 tsp vanilla powder
- 4 dl powdered sugar
Preparation
Preheat the oven to 200 degrees Celsius.
In a bowl, whisk sugar and aquafaba together.
Add oil, lemon juice, and zest to the bowl and whisk for a few more minutes.
In another bowl, combine the dry ingredients together before adding them to the liquid ones.
Mix everything together and then divide the batter into 8 small cupcake forms.
Bake in the oven for 17 minutes.
Allow the cupcakes to cool completely.
Frosting
Add all the ingredients to a bowl and whisk them together.
Add the frosting to a piping bag and decorate the cupcakes.
