Vegan Lemon Drizzle Cake
Ingredients
- 60mls olive oil
- 130gms caster sugar
- 1 tsp vanilla extract
- zest of 1 large lemon
- 310mls almond/oat milk
- 3 tablespoons lemon juice
- pinch salt
Preparation
Put all the ingredients except the flour in a bowl & mix well ? Slowly add the flour a few tablespoons at a time into the bowl and stir in
Keep adding, keep stirring until all incorporated
Grease a baking loaf tin and pour in mix
Bake at 175’c for 40-45mins
When cake cooled down make the icing with 2 tablespoons lemon juice, 8 tablespoons icing sugar & zest of 1 lemon - drizzle over the cool cake. Top with candied lemons & more lemon zest
Serve with chai
