Vegan Lemon Drizzle Cake

Ingredients

  • 60mls olive oil
  • 130gms caster sugar
  • 1 tsp vanilla extract
  • zest of 1 large lemon
  • 310mls almond/oat milk
  • 3 tablespoons lemon juice
  • pinch salt

Preparation

  1. Put all the ingredients except the flour in a bowl & mix well ? Slowly add the flour a few tablespoons at a time into the bowl and stir in

  2. Keep adding, keep stirring until all incorporated

  3. Grease a baking loaf tin and pour in mix

  4. Bake at 175’c for 40-45mins

  5. When cake cooled down make the icing with 2 tablespoons lemon juice, 8 tablespoons icing sugar & zest of 1 lemon - drizzle over the cool cake. Top with candied lemons & more lemon zest

  6. Serve with chai
