Vegan Black Forest Cupcake

Ingredients

  • cake:
  • 1 cup whole wheat flour (120g)
  • 6 tbsp cacao or unsweetened cocoa powder (30g)
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup cane sugar (140g)
  • 1/2 cup mini chocolate chips, optional
  • 1/4 cup vegan yogurt (60g)
  • 3/4 cup water (180g)
  • 1/4 cup any nut butter or apple sauce (60g)
  • 2 tsp vanilla extract ( 8 g )
  • topping
  • 1 tub of vegan cream cheese * 3 tablespoons vegan sugar * 1 teaspoon vanilla essence * 1/3 cup cherry juice * cherries, blueberries or strawberries

Preparation

  1. Combine the flour, cocoa powder, baking soda, salt, optional chips, and sweetener, and stir very well

  2. If your nut butter is not stir-able, gently heat it until stir-able

  3. In a new bowl, whisk together the nut butter, yogurt, water, and vanilla

  4. Pour wet into dry and stir until just combined (don’t over-mix), then pour into the cupcake liners

  5. Bake at 180 degrees for 12 minutes or until batter has risen and a toothpick inserted into the center of the cake comes out mostly clean

  6. Poke the cakes with a toothpick and pour the cherry juice on it

  7. Frosting: mix sugar, vanilla and cream cheese and fill a pastry bag with it

  8. Once the cakes are cooled, frost them and top with the fruit and enjoy
