Peanut Butter and Jelly Protein Balls
Ingredients
Balls
- 1/4 cup almond meal
- 1/4 cup vanilla protein powder (I used @amazoniaco paleo fermented)
- 1/4 cup instant oats
- 1/4 cup crunchy peanut butter*
- 1/4 cup maple syrup
- Strawberry jam **
Chocolate coating
- 40g dark chocolate
- 1tsp coconut oil
- 2 tsp cacao powder
- Desiccated coconut (to roll balls in)
Preparation
Balls
Combine ingredients for the balls (minus the jam) in a bowl and mix until combined.
Use hands to knead mixture like dough to ensure it’s all mixed together.
Form dough into flat circles (like cookie shaped) and place on a plate.
Add a small dollop of jam to the centre of the circles and fold over the top and morph into sphere shapes.
Put in the fridge to cool for at least an hour.
Chocolate coating
Put chocolate and coconut oil in a microwave safe bowl and microwave until melted.
Stir in cacao powder and roll the balls in the chocolate and then in the coconut.
Leave in the fridge for at least 15 minutes to set.
Keep balls stored in the fridge.
