Bang Bang Chicken Breast

Ingredients

  • 1.5 lbs boneless, skinless chicken breast
  • 1 large egg
  • 1 cup crushed cornflakes
  • 1/4 cup flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Bang bang sauce

  • 1/2 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 2 tbsp Thai sweet chili sauce
  • 1 tsp Sriracha
  • 1 tsp honey

Preparation

  1. Preheat oven to 400°F (200°C).

  2. Dip chicken in beaten egg, then coat in a mixture of crushed cornflakes, flour, garlic powder, onion powder, salt, and pepper.

  3. Place on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden and crispy.

  4. Mix the extra 1/2 cup Thai sweet chili sauce with the cooked chicken for a glossy, spicy coating.

  5. To make the Bang Bang sauce, in a bowl combine Greek yogurt, mayonnaise, Sriracha, honey, and the remaining 2 tbsp Thai sweet chili sauce. Whisk until smooth and serve on the side for dipping or drizzling.

  1. This dish is perfect for dipping or tossing the chicken in the sauce.
