Juicy Garlic Herb Chicken Kabobs

Ingredients

  • 2 chicken breasts
  • 1 zucchini
  • 1 small red onion
  • 2 bell peppers
  • 3 garlic cloves minced
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 1 tbsp + 1 tsp Italian seasoning
  • salt + pepper

Preparation

  1. Cut chicken into 1 inch cubes

  2. Combine oil, garlic, lemon juice, Italian seasoning, salt and pepper in a bowl

  3. Add chicken and toss

  4. Cover and refrigerate for a minimum of 1 hour

  5. Soak wooden skewers in water for 20 minutes

  6. Cut vegetables into chunks and toss with a drizzle of olive oil and 1 teaspoon Italian seasoning

  7. Assemble kabobs by alternating chicken and veggies

  8. Cook on the grill for 4-5 minutes per side until crispy
