Grilled Chicken Bruschetta with Cheese

Ingredients

  • Chicken
  • Olive oil
  • Lemon juice
  • Italian seasoning
  • Salt and pepper
  • 1 large tomato
  • 3 garlic cloves
  • 2 tablespoons basil
  • Cheese (e.g., lactose-free Jarlsberg)

Preparation

  1. Marinate chicken in olive oil, lemon juice, Italian seasoning, salt and pepper for at least 20 minutes in the fridge.

  2. Make bruschetta by combining diced tomato, minced garlic, diced basil, and lemon juice.

  3. Grill chicken to your preferred doneness.

  4. Add cheese on top of the chicken and let it melt.

  5. Remove from heat and top with the bruschetta mixture.

  6. Pair with side dishes like asparagus for a complete meal.

  7. Note: This can be prepared faster using a barbecue grill.
