Lebanese Spiced Grilled Chicken Thighs

Ingredients

  • 600g whole chicken thighs
  • 2 tbsp olive oil
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp turmeric
  • 1 tsp ground ginger
  • 1 tsp mixed spice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground black pepper
  • 1 tsp sea salt
  • 1 tsp finely grated lemon zest
  • 1 tbsp chopped fresh parsley
  • A good squeeze of lemon

Optional dressings

  • 1 tbsp toasted pinenuts
  • 1/2 tbsp chopped fresh parsley and/or mint
  • Squeeze of fresh lemon

Preparation

  1. Trim off excess skin from the chicken thighs and discard. Pat them dry with kitchen paper and cut a few bone deep scores on both sides. Set aside.

  2. Put all the marinade ingredients in a mixing bowl and stir to combine. Add the chicken thighs one at a time, rubbing the marinade on both sides and into the scores. Cover and refrigerate for a couple of hours or longer if you have time.

  3. Grill on a high heat for 8-10 minutes on each side. Adjust cooking time based on the size of the thighs.

Tips

  1. Double the marinade to prepare more chicken thighs.
