Easy Beef Koftas on Skewers

Ingredients

  • 500g beef mince (12% or 20% fat)
  • 1/2 medium onion
  • 2 medium cloves garlic
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • Handful fresh parsley leaves (fresh mint or coriander also work)

Preparation

  1. Soak wooden skewers in water. Blend the parsley, onion, garlic and lemon juice in a food processor or juicer then add to all the other ingredients in a mixing bowl.

  2. Knead the mixture until thoroughly combined and smooth. Divide the mixture into 6 and shape with your hands then place them back in the fridge for 15 minutes before skewering and gently pressing the koftas onto the skewer to make secure.

  3. Grill on high for approximately 4-5 minutes each side, turning over when browned. BBQ times may vary.

Tips

  1. Serve with tzatziki and homemade flatbreads or use store-bought pittas.

  2. This recipe is budget-friendly and ideal for summertime grilling.
