Swiss Chard Turkey Meatballs
Ingredients
- swiss chard turkey meatballs (makes 16-18 meatballs)
- olive oil
- 1/2 small yellow onion, finely chopped
- 2 garlic cloves, minced
- 1 bunch of green swiss chard, ribs removed and leaves chopped
- 1 egg, beaten
- 1/2 cup panko breadcrumbs
- 1/2 teaspoon salt
- pinch of black pepper
- 2 teaspoons dried italian seasoning
- small handful of italian parsley, chopped
- 1 pound ground turkey
Preparation
Preheat oven to 375 degrees
Line a baking sheet with foil
Heat olive oil (enough to coat the pan) in a medium skillet over medium heat
Add onion and cook for about 5 minutes until softened
Add garlic and cook for another minute
Add Swiss chard and cook for another 3-4 minutes
Remove from pan and place in a bowl to cook slightly
In a separate large bowl, add the egg, panko, salt, pepper, Italian seasoning, parsley, ground turkey and Swiss chard
Mix with hands (if it seems too wet, add some extra panko)
Form turkey mixture into golfball-sized balls and place on baking sheet
Place in oven and bake for 15-20 minutes, or until the outside is slightly golden and internal temperature reads 165 degrees
